This is one of my favorite summer recipes and maybe my all-time favorite pasta recipe. It’s simple, fresh, and SO good.
All you need is: 🍅 Fresh tomatoes 🧄 Garlic 🫒 Olive oil 🌿 Fresh basil Salt + pepper Red pepper flakes
I love tossing it with angel hair pasta and finishing it with Parmesan. I don’t cook the tomatoes down too much because I like the sauce fresh and a little chunky, but if you prefer it smoother, just let it simmer a little longer.
Seriously, it’s the perfect light summer pasta.

Most people only spend a few hours in Ollantaytambo before catching the train to Machu Picchu, but this charming town deserves so much more.
As the last living Inca city, Ollantaytambo is the only town in Peru where people still live within the original Inca street layout. Walking its cobblestone streets feels like stepping back in time.
We spent our first three nights here after flying into Cusco, and it was the perfect place to acclimate while exploring the Sacred Valley. We wandered the ancient streets, explored the incredible Inca ruins, and took day trips to Moray, the Maras Salt Mines, and Chinchero.
If you’re planning a trip to Peru, don’t make Ollantaytambo just a stop on the way to Machu Picchu.
