There’s something extra special about a tomato picked straight from the garden. It’s juicy, sweet, and so much more flavorful than anything sitting on a grocery-store shelf in the middle of winter. When my garden tomatoes start ripening faster than we can eat them, this homemade pasta sauce is always one of the first recipes I make.

  • 2 pounds ripe fresh tomatoes, approximately 6–8 medium tomatoes
  • 1/4 cup extra-virgin olive oil
  • 4-6 garlic cloves, chopped
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon red pepper flakes
  • 1/2 cup loosely packed fresh basil leaves, torn or thinly sliced
  • 12 ounces pasta, for serving
  • Shredded Grated Parmesan cheese, for topping

How to Make Pasta Sauce with Fresh Tomatoes

1. Prepare the tomatoes

Remove the cores and chop the tomatoes into small pieces. Be sure to save all those delicious tomato juices, because they belong in the sauce!
You don’t need to peel the tomatoes for this rustic recipe. If you prefer an extra-smooth sauce, you can peel them first or blend the finished sauce.

2. Sauté the garlic

Heat the olive oil in a large skillet or saucepan over medium-low heat. Add the minced garlic and cook for about 30–60 seconds, stirring frequently.
The garlic should smell fragrant but shouldn’t turn dark brown.

3. Add the fresh tomatoes

Add the chopped tomatoes and all their juices to the pan. Season with salt and pepper, then stir everything together.
Bring the tomatoes to a gentle simmer. Cook uncovered for 10-20 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens. If you like a thicker sauce, let it sauté for another 10 minutes or so.
For a chunkier sauce, gently mash some of the tomatoes with the back of a spoon. For a smoother consistency, carefully blend the sauce with an immersion blender.

4. Add the basil

Remove the sauce from the heat and stir in the fresh basil. Taste and add more salt or pepper if needed.
Adding the basil near the end keeps its flavor fresh, bright, and wonderfully summery.

5. Toss with pasta or spoon it on top

Allow the sauce to cool completely before transferring it to an airtight container. Store it in the refrigerator for up to four days.
Gently reheat the sauce in a saucepan over medium-low heat. If it thickens in the refrigerator, add a small splash of water as you reheat.

Can You Freeze Fresh Tomato Sauce?

Yes! This sauce freezes beautifully.
Let it cool completely, then transfer it to freezer-safe containers or bags. Leave a little room at the top because the sauce will expand as it freezes. Freeze for up to three months.
