Fresh Tomato Pasta Pomodoro Sauce

Ingredients
  

  • 2 lb Ripe Fresh Tomotoes 4-6 tomatoes
  • ¼ C Olive Oil extra virgin
  • 4-6 Cloves of Garlic
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • tsp Red Pepper Flakes
  • ½ C Fresh Basil Leaves
  • 12 oz Angel Hair Pasta
  • Shredded Parmasan Cheese for topping

Instructions
 

  • Prepare the tomatoes by removing the cores and chopping the tomatoes into small pieces. Be sure to save all that delicious tomato juice. You don’t need to peel the tomatoes for this rustic recipe. If you prefer an extra-smooth sauce, you can peel them first or blend the finished sauce.
  • Heat the olive oil in a large skillet or saucepan over medium-low heat. Add the minced garlic and cook for about 30–60 seconds, stirring frequently. The garlic should smell fragrant but shouldn’t turn dark brown.
  • Add the chopped tomatoes and all their juices to the pan. Season with salt, black pepper, and red pepper flakes, then stir everything together.
  • Bring the tomatoes to a gentle simmer. Cook uncovered for 10–20 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens.
  • For a chunkier sauce, gently mash some of the tomatoes with the back of a spoon. For a smoother consistency, carefully blend the sauce with an immersion blender.
  • While the sauce simmers, boil water and cook your angel hair according to the package directions.
  • Remove the sauce from the heat and stir in the fresh basil. Taste and add more salt or pepper if needed.
  • Adding the basil near the end keeps its flavor fresh, bright, and wonderfully summery.
  • Add the drained pasta directly to the sauce and toss it in the pan, or spoon it over your angel hair in a serving bowl. This part is up to you and your preference.
  • Top with parmesan cheese and enjoy.
