Authentic Greek Tzatziki

We learned how to make this super-fresh and easy Tzatziki during a cooking class on the island of Naxos in the Greek Isles. Once you make this, I guarantee you will never eat store-bought again.

Ingredients
  

  • ½ Cucumber
  • 2 Garlic Cloves finely minced
  • 3-4 tbsp Olive Oil
  • 16 oz Greek Yogurt strained
  • 1-2 tbsp Red Wine Vinegar
  • 1 pinch Salt
  • 1 pinch pepper optional

Instructions
 

  • Peel and grate the cucumber into a large bowl. Season with a pinch of salt and let sit for 20 minutes.
  • After 20 minutes, squeeze the grated cucumber in your hands to release any remaining liquid.
  • In a medium-sized bowl, add the grated cucumber, minced garlic, olive oil, red wine vinegar, Greek yogurt, and another pinch of salt. You can also add black pepper, too, if desired.
  • Mix until all of the ingredients are combined.
  • Chill in the fridge and enjoy.
  • If desired, add a sprig of dill and some sliced cucumbers for garnish.
