We learned how to make this super-fresh and easy Tzatziki during a cooking class on the island of Naxos in the Greek Isles. Once you make this, I guarantee you will never eat store-bought again.
Peel and grate the cucumber into a large bowl. Season with a pinch of salt and let sit for 20 minutes.
After 20 minutes, squeeze the grated cucumber in your hands to release any remaining liquid.
In a medium-sized bowl, add the grated cucumber, minced garlic, olive oil, red wine vinegar, Greek yogurt, and another pinch of salt. You can also add black pepper, too, if desired.
Mix until all of the ingredients are combined.
Chill in the fridge and enjoy.
If desired, add a sprig of dill and some sliced cucumbers for garnish.
