Luscious Lemon Cookies

A soft and chewy cookie recipe with just a hint of lemon.

- 1 cup Softened salted Butter
- 1 cup Sugar
- 1 cup Firmly Packed Light Brown Sugar
- 2 Eggs
- 1 tsp Grated Lemon Rind
- 2 tbls Fresh Lemon Juice
- 3 ½ cups Flour
- 1 tsp Baking Soda
- ¼ tsp Salt
Preheat oven to 350°
Beat the butter and both sugars until fluffy.
Beat in one egg at a time.
Add in the lemon rind and lemon juice and continue beating until blended.
Slowly add the flour, baking soda and salt and beat on low until a thickened dough is formed.
Place dough in the refridgerator for 20 minutes to chill.
With a tea spoon take the dough and form into 1 1/2 inch balls and place onto a greased cookie sheet.
Cook at 350 degrees for 9 minutes or until the edges are ever so lightly browned.
Let the cookies cool on a cooling rack and enjoy.
