Lemon Bars

A delicious bar cookie made with an easy shortbread crust topped with a creamy lemon filling.

- 1 cup All Purpose Flour
- ½ cup Butter softened
- ¼ cup Powdered Sugar
- 2 Eggs
- 1 cup Granulated Sugar
- ½ tsp Baking Powder
- ¼ tsp Salt
- 2 tsp Lemon Zest
- 2 tbsp Lemon Juice
Heat oven to 350 degrees.
Mix flour, butter, and powdered sugar until combined.
Press mixture into ungreased, square 8x8 pan or baking dish, making sure the edges are a little thicker than the center.
Bake at 350 degrees for 20 minutes.
Beat the remaining ingredients until light and fluffy. This takes about two to three minutes.
Take the crust out of the oven and pour the lemon mixture onto the hot crust.
Bake at 350 degrees for 20 minutes or until there is no indention when touched lightly in the center.
Cool, and dust with powdered sugar.
Cut into squares and enjoy.
