Lemon Bars

A delicious bar cookie made with an easy shortbread crust topped with a creamy lemon filling.

Ingredients
  

  • 1 cup All Purpose Flour
  • ½ cup Butter softened
  • ¼ cup Powdered Sugar
  • 2 Eggs
  • 1 cup Granulated Sugar
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 2 tsp Lemon Zest
  • 2 tbsp Lemon Juice

Instructions
 

  • Heat oven to 350 degrees.
  • Mix flour, butter, and powdered sugar until combined.
  • Press mixture into ungreased, square 8x8 pan or baking dish, making sure the edges are a little thicker than the center.
  • Bake at 350 degrees for 20 minutes.
  • Beat the remaining ingredients until light and fluffy. This takes about two to three minutes.
  • Take the crust out of the oven and pour the lemon mixture onto the hot crust.
  • Bake at 350 degrees for 20 minutes or until there is no indention when touched lightly in the center.
  • Cool, and dust with powdered sugar.
  • Cut into squares and enjoy.
