Chunky Gazpacho

Ingredients
  

  • 1 ½ lbs Vine Ripe Tomatoes - peeled and seeded
  • 1 Cucumber- peeled and chopped
  • ½ Sweet Onion - finely chopped
  • 1 Bell Pepper - chopped
  • 1 Jalapeño Pepper - minced
  • 1 Small Garlic Clove - minced
  • 1 Celery Stalk- chopped
  • 2 cups Tomato Juice
  • ¼ cup Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 2 tsp Worcestershire
  • ½ Lime - squeezed
  • ¼ tsp Cumin
  • ½ tsp Salt
  • ¼ tsp Black Pepper

Instructions
 

  • Chop, peel and mince all of your vegetables.
  • Add all the vegetables to a glass bowl.
  • Pour in tomato juice, olive oil, red wine vinegar and Worcestershire sauce.
  • Add the lime juice.
  • Mix in the cumin, salt and pepper.
  • Cover and refrigerate until chilled. Enjoy this tasty summer dish.
