Luscious Lemon Cookies

A soft and chewy cookie recipe with just a hint of lemon.

Ingredients
  

  • 1 cup Softened salted Butter
  • 1 cup Sugar
  • 1 cup Firmly Packed Light Brown Sugar
  • 2 Eggs
  • 1 tsp Grated Lemon Rind
  • 2 tbls Fresh Lemon Juice
  • 3 ½ cups Flour
  • 1 tsp Baking Soda
  • ¼ tsp Salt

Instructions
 

  • Preheat oven to 350°
  • Beat the butter and both sugars until fluffy.
  • Beat in one egg at a time.
  • Add in the lemon rind and lemon juice and continue beating until blended.
  • Slowly add the flour, baking soda and salt and beat on low until a thickened dough is formed.
  • Place dough in the refridgerator for 20 minutes to chill.
  • With a tea spoon take the dough and form into 1 1/2 inch balls and place onto a greased cookie sheet.
  • Cook at 350 degrees for 9 minutes or until the edges are ever so lightly browned.
  • Let the cookies cool on a cooling rack and enjoy.
